Yeah it’s over the top, but this guy is one of the top mixologist/bartenders in Japan. Putting on a show with every pour, even something as bland as water, is part of the reason you’d go to his bar.

A guy name Martin Riese is the worlds leading of these pretentious r/hydrohomies, but from the interviews i’ve seen, he seems like a decent guy who just really likes good quality h2o.
This is probably free. If you’re there, you’re already spending a lot. It’s an experience, and he’s probably going to get plenty of tips, so it’s worth the show.

My main gripe is those iceballs are trash. I mainly worked in dive and sports bars but when we broke out the molds we actually put some effort into making the ice look nice.
